Reviewing the Mail: Week of 7/7

This week, I'm writing to you from the end of a very long weekend (I used the Independence Day holiday to stretch out through the end of that week), which, sadly, turned out not to be as restful as it could have been. (Thing 2 had Medical Issues which put him in a hospital for almost 24 hours -- he's fine now, and it wasn't the appendicitis we were all afraid it was -- and that tends to make things fraught and nerve-wracking.) But, still, I didn't have to go to the office for five days straight, and that's a wonderful thing.

During the holiday-shortened week, I did get some mail, and some of that mail was books sent in hopes I'll review them. What will follow are not those reviews, since I haven't read these books yet, but it is what I can tell you about them without having read them. Any errors of fact are entirely mine, as are errors of interpretation. These books are almost certainly much more interesting, exciting, and fun than I will present them as (if the recent Scalzi kerfuffle has taught us all anything, it's taught us that).

First up is Earth Unaware, a new novel by Orson Scott Card and Aaron Johnston, which is a Tor hardcover, coming July 17th. It's the first book of "the Formic Wars," and that series is (as astute readers have already realized) a prequel to Card's most famous and popular novel, Ender's Game. Thus this is the story of how the alien Buggers came to discover Earth's unprotected, soft backside and to cruelly thrust their war-making apparatus therein.

I have two books this week that I've already seen once -- and still not read; is this guy Wheeler really such a slacker? -- the first of which is Bill Pronzini's latest "Nameless Detective" novel, Hellbox. (You can see what I wrote about it on April 7th, if you like.) This is one of the great PI series of the last half-century, and it's still going: Hellbox is a Forge hardcover, which was officially published last week.

The other book I've seen once before is J.A. Pitts's Forged in Fire, the third book in an urban fantasy series about a female blacksmith-turned-dragonslayer in the Pacific Northwest. (That's her butt on the front cover, as required by the law of urban fantasy covers; you know she's an urban fantasy heroine because of the butt in black leather, but you know she's tough because of the punky haircut and the fact that you can actually see her face.) I didn't say much about this book the first time -- unlike the Pronzini series, I've never read Pitts's books -- but you can read that not much, if you like. This is a Tor hardcover, and hit stores on June 19th.

Last for this week is a new anthology about the singularity -- this generation's great SFnal idea, that computer speed and processing ability will continue its logarithmic growth rate and explode past us into superhuman, self-aware realms Any Day Now -- edited by James Patrick Kelly and John Kessel, entitled Digital Rapture. I suspect they might be more interested in the singularity as a subject for stories than as True Believers, since this all-reprint anthology begins with Asimov's 1956 story "The Last Question" before getting into the requisite Stross, Doctorow, Egan, Vinge, and Kurzweil material. (Digital Rapture has several works of nonfiction among the stories, including Vinge's foundational 1993 paper "The Coming Technological Singularity" -- which is coming today exactly as much as it was in 1993, you betcha -- so it looks to provide as good a single-volume overview of the current SF love for singularitudinousness as you could hope for.) Digital Rapture is a trade paperback, coming in August from Tachyon.

  • 3 teaspoons sugar
  • 17.30 ounces frozen biscuits

Method to make Rou Jia Mo

  1. Heat oven to 375 ° F.
  2. Cook the ground sausage bit and drain fat.
  3. While pork is cooking, chop onion and garlic. Add to the sausage.
  4. Add white wine and vinegar. Added sugar. Stir.
  5. Add chili oil and pepper. Stir.

Vegetable Rice Cake, Lontong Sayur

Ingredients:
For Lontong:
500 g of rice, rinsed and drained
banana leaf
toothpick

For the vegetables:
500 g of meat, cut into small pieces
2 pieces of canned young jackfruit, potong2
Long beans, potong2 (I use a small bean)
Rice cake (ready mix)
Coconut milk 2 small boxes (or can be partially substituted milk)

Spices:
Pecan 3 eggs
Red onions 6 eggs
4 cloves of Garlic
Red chillies 2 pieces or more depending on the spiciness (remove seeds)
1 cm turmeric, optional
Half tsp dried shrimp or Paste
salt to taste
sugar to taste
Other spices:
Salam leaves 3 pieces
Laos 3 cm
1 stalk lemon grass


Intruction:
Create Lontong: Roll the banana leaf with cylinder shaped with a diameter of 3 cm. Hook one end with a toothpick. Enter a rice 3/4 high leaf. Close with toothpicks pinning. Arrange in pan and pour the water until completely submerged. Cook for 4-6 hours. During cooking do not let the water dry.

Make Vegetables: Heat oil and saute the garlic finely, lemongrass, bay leaves, and galangal
add shrimp and mix to change color. enter
squash, banana and tomato. Stir well. Pour santan. Mix occasionally until
sauce is not broken and cook until all cooked. Lift.

Cut rice cake in a bowl and pour the vegetables over it.

Sift Together

How to Make

     Stir flour mixture, potatoes, and onions until blended. Set aside.
     Mix the egg yolks and milk until blended. Pour a little into the flour mixture while mixing well.
     Enter the nutmeg and stir well. Add beaten egg whites have stiff and stir well. Let stand for 30 minutes.
     Heat the pan, spread with butter. Pour 100 ml of the mixture. When half cooked, sprinkle with bacon. Cook until done. Lift.
     Serve warm.

For anyone working in downtown Houston, this is the place to go (for the most part).  For $3.99, you get three HEAPING servings of veggies, along w/ a roll or piece of cornbread!  On this day, I went with the spinach, alfredo pasta, and the mashed potatoes.  Thank goodness that I'm not a vegetarian, because these mashed spuds were LOADED with bacon bits.  Kind of funny that they call this the vegetarian plate, then serve you bacon infused mashed potatoes.  It was OK with me though, since they were deeeeeeeelicious.  The pasta was just OK and the spinach was just there to make myself think that I was being healthy.  Great jalapeno cornbread, with the perfect spicy, salty & sweet ratio.

My favorite basked potato is definitely the BBQ baked potato.  The best part about making your own, is that you can pile on an entire lb. of BBQ brisket meat.  If I weren't so lazy, maybe I would have BBQed my own brisket, but on this day I purchased some shredded HEB BBQ brisket and PILED it on this potato, which was slightly under-baked.  I should have let it bake in the oven for JUST a bit longer, and I should have also applied the butter midway through the baking (to give it that super buttery taste).  Instead, I was left with an average spud with above average toppings (a shit-ton of BBQ, butter, cilantro, cheese & butter).  Oh well... live and learn.

The chicken fried steak.  One of the greatest inventions in the history of mankind.  Many have tried and succeeded at creating a delicious CFS (Mason Jar, Luby's), while others have struggled and sold their CFSs based on size (Hickory Hollow, Goodson's) or "quality".  The truth is, I'm not sure this thing was meant to be made with "quality".  This proved true today at Ouisie's table when I ordered their $18 chicken fried steak, and was left disappointed as hell.  I've actually heard good things about the CFS at Ouisie's, but it was nothing special and served with a very small amount of gravy.  The steak itself was VERY thin, and the batter had almost no flavor.  I would have drenched the sucker in gravy, but there was barely any available!  Overall, I would say that this was a 4 on a scale of 1-10, but keep in mind that I do consider myself a chicken fried steak snob.  Mason Jar is still the best CFS in Houston.  The side dishes were also very average.

I'm not sure exactly what this place is called, but it is located in the food court area with Otto's BBQ, Teppanyaki, Murphy's Deli...etc.  I ended up ordering the korean tacos ($8) for lunch, and was reasonably pleased.  I would have gone with the banh mi, but at $6.50 for a Vietnamese sandwich, I had to say HELL NO.  

I ordered each of the flavors (beef, chicken and bbq pork), and no taco really stuck out over the others.  I would say the chicken was my least favorite with the BBQ pork being really weird since it was like an American BBQ sauce topped with kim chee pico and asian mayonnaise. 

These tacos were served with an asian slaw (which was just OK) and some of those white crunchy things that Asian places serve randomly.  I would have preferred a bag of chips.  Overall, I would say that this place deserves to be tried once, and if you are OK with overpaying for average Asian fast food...you should return.

Zydeco's - Chicken and Sausage Gumbo

Venturing into a sketch part of downtown and eating at a "hole in the wall" restaurant like Zydeco's was a TRUE TREAT!  I was talked into going there by one of my coworkers, and thoroughly enjoyed my chicken and sausage gumbo (served with a slice of jalapeno cornbread).  I don't exactly consider myself a gumbo connoisseur, but I would consider this to be the best gumbo I've ever had in my life (EASILY).  At just over $5 per bowl, it was really the perfect lunch portion and soooooooo damn delicious.  The soup is very thick and there is plenty of tasty chicken, sausage and rice swimming around in the bowl.  This shit must be PERFECT if one is hungover (I may have to try one day as a pho replacement).  TOP NOTCH GUMBO!

    12 eggs
    1 1/4 cups confectioners' sugar
    1 cup all-purpose flour
    1 1/2 teaspoons cream of tartar

Directions
  1. Enter into a glass, until you have 1-3/4 cups egg whites. Let stand for at least 30 minutes to reach room temperature.
  2. The oven rack in lower-middle position; Preheat oven to 325.
  3. Sifted powdered sugar and flour. Sieving repeated twice. Set aside.
  4. Bowl, using the MED-low a separate manual egg beater egg whites until they broke up, and starts to bubble. New tartar and salt paste on medium speed, beat until soft peaks form. Mixer running, gradually add sugar, 1 tablespoon. Add extract and continue to fight until stiff peaks, still shiny - be careful not to overbeat.
  5. Pastry on top sprinkle with sugar mixture 1/4 cup filver / flour, a large rubber spatula to gently times, until the sugar / flour disappears. Repeat, adding the remaining cup of sugar and fold / flour 1/4 the mixture. Gently pour the batter ungreased10 inch tube pan. Rap anti-pot several times, to remove large air bubbles.
  6. Bake for 45-55 minutes until dry and cracked behind the back when gently touched. Immediately by inverting the pot for the neck of the bottle or line 2 hours, until completely cooled cake. Loosen edges of cake from the pan with a knife. Cut a light sawing motion, using a serrated knife.

Seasoned Baked Potato Chips

Ingredients:

    2 teaspoons canola oil
    1 large Russet potato (or 2 medium size), about 10 ounces
    Canola cooking spray
    1/2 teaspoon seasoned salt

Preparation prior to cooking:

    Preheat oven to 400 degrees. Brush canola oil over nonstick jellyroll pan below.
     Using a large, sharp, not serrated knife, then cut the potatoes into very thin slices (about 1/16 inch thick).
     Immediately laid flat potato slices into the pan (they should completely cover the bottom of the pan). Spray the tops with canola cooking spray and sprinkle with salt berzodium.
     Bake for about 20-26 minutes, watching carefully. Remove the chips that have browned and crisp and continue to cook the remaining chips until they become nice and crispy, about 5 minutes longer.

Yield:
3 servings

How do I make it? follow the steps below:

Beef Ribs soup, The Indonesian Delicious RecipesProvide the following materials:
750 grams of beef ribs
2 carrots cut into thick
4 small potatoes, diced
3 leeks, chopped

Seasonings I:
3 cm ginger, dikeprek
3 cm cinnamon
2 pieces of deaf
4 item cardamom
2 blocks of stock items
1/4 nutmeg, dikeprek
salt to taste



Seasonings II:
8 pieces of garlic
5 pieces of red onion

How to cook:
A. Boil ribs on medium heat for 2 hours for tender
2. I enter into a stew spice rack, and boil again for 60 to 90 minutes so the meat is tender
3. Puree II seasoning, then stir-fry until fragrant. Add the carrots and potatoes into stir until wilted.
4. Add the carrots and potatoes into the boiling ribs, and cook back at least 10-15 minutes.

Its ingredients include:
350 grams of squid without head
1 teaspoon lemon juice
1 teaspoon fish sauce
2 cloves garlic, finely chopped
1/2 onion, cut into 2x2 cm
1 cm ginger, crushed
2 green chilies, cut in oblique
1/2 plum tomatoes, cut into pieces
2 tablespoons oyster sauce
1/2 teaspoon fish sauce
1 teaspoon soy sauce
1/4 teaspoon salt
1/4 teaspoon ground pepper
Squid In Oyster Sauce200 ml of water
1 teaspoon cornstarch, dissolved in 1 teaspoon water
1 stalk spring onion, cut into oblique 1 1/2 cm

How To Make it even easier:
  1.      Cut the two squid, cut into 5x5 cm, slice, slice the inside of the squid.
  2.      Sprinkle with lemon juice and fish sauce. set aside
  3.      Saute garlic, onions, and ginger until fragrant.
  4.      Add green peppers. Stir until wilted.
  5.      Enter the squid. Stir until the color changes.
  6.      Add the tomatoes. Stir until wilted.
  7.      Enter the oyster sauce, fish sauce, soy sauce, salt, and pepper. Stir well.
  8.      Pour the water. Cook until boiling. Thicken with cornstarch solution. Bring to a boil again.
  9.      Add scallions. Stir well. lift

The Brisket House

Even though I have about 20 posts to catch up on, I wanted to give The Brisket House (on Augusta & Woodway) a shout out for a delicious dinner.  The best part? ...dinner was free! ... not really...but I did find a $20 bill in the shorts that I put on tonight.  YEEEEEEEHAW.

Anyways, the brisket and spicy sausage were both VERY good, served on a sheet of paper with a warm BBQ sauce.  We went with the pinto beans and baked potato salad (w/ bacon, cheese, mayo, sour cream, etc) as side dishes, both perfectly complementing our meats.

I would say the sausage was better than the brisket (ironic since this place is called the brisket house), but the pecan smoked meats (whatever that means) were both simply perfect.  My only regret was that they were out of chicken...which means its got to be pretty damn good as well, no?

Saltgrass - Steak & Fries

Saltgrass is an underrated steakhouse, serving up delicious steaks at affordable prices.  Pictured here is a 6oz filet, served with a side of sweet potato fries and a salad for only $14 bucks!  Even though I have conquered the 48 oz. bad-boy at Shula's, I will admit, that a nice 6 oz. steak will sometimes hit the spot perfectly.  Leaney went with the chicken & sausage, which was good....but looked kind of boring.  The garlic butter on the steak was a great touch.  I would also highly recommend the BBQ if you're ever in the neighborhood (that's the best part...they are in EVERY neighborhood!  It's a chain restaurant!)

Little Napoli - Pepperoni Pizza w/ Peppers

Leaney and I seem to always have a Little Napoli daily deal of some sort, and on this day we decided to grab a pizza instead of pasta (along w/ some of the crabcakes).  We went with the large pepperoni and peppers, maxing out our Groupon at $25 (the crabcakes were $10 of that).  The pizza was very good, but something seemed to just be a bit off.  The thing was GINORMOUS, but I couldn't help to think that it could have been better.  Maybe because the pasta dishes are so good, that I expected more from their pizza?  I have no clue why I wasn't completely satisfied, even when we walked out with more than half the pizza to go.

You can almost never go wrong with a chicken tender basket...especially when it comes with EIGHT chicken tenders.  For under $5, venture to the Bell St. Cafe for this delicious food coma inducing fried basket of goodness.  It's been a crazy summer so far.  Many lost sports bets (thank god, mostly tiny losses), many weekends out of town (Austin & Charleston), many hours of work and many lbs gained.  This will hopefully be one of the last chicken tender baskets I eat until I am under 210 lbs.  I would go for 200...but I really need to practice taking one step at a time.  Weighed in at 215.1 on Saturday morning only to gain 7 lbs over the next 36 hours (weighed in at 222.4 before bed last night).  Somehow I was back down to 216 after my run tonight, but it's time to try to get out of the deuce + 10 club.  Hopefully by the end of July!

The nacho cheese burrito from Taco Bell ...the fat, ugly cousin of the beefy cheesy crunch burrito (the one filled with spicy fritos).  OK...so maybe its not that bad...but why change something when it's working for you?  This thing was just not as good and really seemed to just take a step backwards in terms of fast food burrito innovation.  Why not something more daring... like funyons?  eh? eh?  It's certainly worth a try...but I won't be ordering it again.

Little Marcos Vega Jr. had stopped breathing and was turning blue, but 2 hero undercover cops sprung into action to save his life.
A Bronx dad praised two investigators from the Brooklyn district attorney’s office as his baby son’s “guardian angels” Tuesday after they brought the newborn back from the brink of death.
Marcos Vega had just returned with a box of diapers to his E. 169th St. home in the Concourse section of the Bronx when his wife and three daughters began screaming for help shortly after 1 p.m. Monday.

His wife, Kathleen Kilian, ran downstairs holding their 6-week-old son, Marcos Jr. — who had stopped breathing and was turning blue.

The frantic couple dialed 911 but didn’t wait for an ambulance — they darted outside near Grant Ave. and began flagging traffic for help.

“We tried to stop all kinds of cars,” said Vega, 36. “We tried to get a cab. Nobody would stop.”

That’s when Brooklyn DA investigators Vito Maniscalco and James Russell — who were working undercover nearby — spotted Kilian on the corner, sobbing and holding her limp baby.
The officers “risked blowing their cover” and rushed the family into their unmarked car to drive them to Bronx Lebanon Hospital, a law enforcement source said.

“They told us to get into the car,” Vega said. “One of the officers grabbed the baby (and) started giving him mouth-to-mouth.”
Russell gave CPR to little Marcos — who was bleeding from his left nostril — as Maniscalco sped down Grand Concourse to the hospital almost 2 miles away, sources said.
“(The officers) were his guardian angels,” said Vega, a construction worker. “They saved his life.”
The child began breathing just as the heroic officers pulled up to the hospital.
“I grabbed the baby and rushed into the emergency room,” Vega said.
The worried dad handed his only son over to a team of doctors and nearly collapsed.
“I’ve seen a lot of horrible things growing up in these streets, but nothing compared to what I was feeling,” Vega said. “But I had to stay focused.”
Doctors were still running a litany of tests on the baby boy on Tuesday, but they believe he stopped breathing because he caught pneumonia, Vega said.
The newborn may have choked on his milk because he was sick, Vega said.
Little Marcos was under observation in an ICU ward with his mother sitting at his bedside. The child was expected to make a full recovery and may be released next week.
“He’s 6 weeks old and he’s already a fighter,” Vega said.
Vega said he didn’t even want to imagine what could have happened if the two officers weren’t working nearby.
“If it weren’t for the cops, my son wouldn’t be here right now,” Vega said. “I want to thank them with all my heart. I owe them the world.”

MTA cop stabbed in eye; attacker killed at Queens LIRR station

NEW YORK  – A veteran Metropolitan Transportation Authority police officer was stabbed in the face Wednesday morning during a violent confrontation with a knife-wielding man at Jamaica station in Queens, officials said.
John Barnett, 45, was on a patrol on Sutphin Blvd. outside the station when without provocation an emotionally disturbed man walked up to him and slashed him under his left eye, MTA Chairman Joesph Lhota told reporters,

Barnett, who has been a MTA officer for 13 years and is a veteran of the wars in Iraq and Afghanistan, repeatedly told the man to drop his knife and when he didn’t, Barnett fired four times, killing the man, Lhota told reporters.
“In a split second, he confronted a violent person, an individual who posed a threat directly to him and to everyone around the officer. I am absolutely in awe of his bravery,” Lhota said.
The incident happened just after 9 a.m. below the Long Island Rail Road platform at Jamaica Station, CBS 2’s Amy Dardashtian reported.
Witness Steven Lopez thought the sound of the gunshot was a blown tire before several more shots followed.
“We heard a gunshot,” Lopez said. “Then we heard two shots in a row that echoed so loud that it became so clear that it was an actual gunshot.”
“I just heard three shots, I thought it was firecrackers at first,” one witness said.
Family members and officers rushed to Jamaica Hospital to be with Barnett, whose injuries are described as serious but non-life threatening. He is not expected to lose his eye, D’Auria reported.
Gov. Andrew Cuomo said he spoke with Barnett before he went in to surgery and thanked him on behalf of all New Yorkers for his courage.

“Today we are reminded once again of the bravery and sacrifice of our men and women in law enforcement, and the many dangers that accompany the important job of keeping our state’s residents safe,” Cuomo said in a statement. “We applaud Officer Barnett’s bravery and pray for a full recovery.”
Undercover police officers are canvassing the area showing people a picture apparently looking for another person of interest, Dardashtian reported.
The investigation is ongoing.

Missing millionaire Guma Aguiar's wife has filed a motion for permission to sell the couple's mansion and yacht, which are valued at $7.1 million.
Though his body has not been found and questions have arisen about whether Aguiar may, in fact, be alive, his wife's attorney wrote in the filing obtained by ABCNews.com that she "must face the possibility that she will never see Guma again."
Aguiar, 35, was last seen on June 19 in Fort Lauderdale, Fla. Early the next morning, his 31-foot fishing boat washed up on a Fort Lauderdale beach with the engine running and lights on, but with no sign of its Brazilian-born owner.

Aguiar's mother Ellen Aguiar and wife Jamie Aguiar are embroiled in a nasty legal fight for control of his assets, valued at over $100 million.

At a hearing on Tuesday, a Florida judge appointed Northern Trust, a wealth management company, with conservatorship over all of Aguiar's trust assets. Florida attorney Thomas Panza was appointed to manage all of Aguiar's non-trust assets and Fort Lauderdale Mayor Jack Seiler was appointed conservator over all litigation.

"Jamie has concluded that she must face the possibility that she may never see Guma again and, accordingly, must be frugal to preserve the family fortune to the greatest extent possible," Jamie Aguiar's attorney William Scherer wrote in the motion.
The couple's Fort Lauderdale house is valued at $5 million and their 75-foot Lazzara boat "The Zion" is valued at $2.1 million, according to court documents.

Guma and Jamie Aguiar own the house and boat together, so the assets are not the property of the conservator, but Jamie Aguiar cannot sever her interest from the house or boat from Guma's interest without consent from the court and an order from the court granting her permission.

"Both the home and the boat are far too large and expensive for Jamie to maintain and keeping them would not be conducive to Jamie's goal for conserving funds," Scherer wrote. "Further, the recent media attention surrounding this case has attracted a number of strangers who are constantly near the home, creating a real fear for Jamie that she and her children are in danger. As such, she wants to sell the home and the boat in an attempt to obtain financial and emotional peace of mind."
Jamie Aguiar wants to move into a smaller home that is easier to manage financially, according to the filing. Her husband's potential share of any proceeds from a sale would be held in trust "pending his return" or "if he is deemed deceased, can then be released to Jamie."

"With Guma gone, Jamie must conserve what remains of the fortune they once had which has been virtually cut in half due to Guma's tumultuous litigation with his uncle and his exorbitant spending while he was ill," Scherer wrote.

Aguiar's disappearance has triggered a legal melodrama.

Jamie Aguiar and her mother-in-law Ellen Aguiar have insulted each other through their legal filings, calling each other liars and greedy and uncaring about the man who is missing.

Aguiar's uncle Thomas Kaplan, who was tangled up in law suits with the missing millionaire, has suggested that he is alive and has asked the court preserve any electronic data related to Aguiar's disappearance, including any communication between Guma and Ellen Aguiar.
Aguiar has said that he feared that his uncle was trying to kill him because of their business dispute. In a 2010 court document, Kaplan's legal team disputed those accusations.
"Aguiar's psychosis manifested itself in both grandiose and paranoid delusions," a court document from 2010 reads. "With respect to his paranoid delusions, Aguiar has stated on multiple occasions that Kaplan was trying to kill him. Aguiar believes that he has been poisoned, the he was shot in the back from a helicopter, that snipers have been following him and that the medical staff at an Israeli hospital were injecting him with poison in order to kill him."
