My favorite basked potato is definitely the BBQ baked potato.  The best part about making your own, is that you can pile on an entire lb. of BBQ brisket meat.  If I weren't so lazy, maybe I would have BBQed my own brisket, but on this day I purchased some shredded HEB BBQ brisket and PILED it on this potato, which was slightly under-baked.  I should have let it bake in the oven for JUST a bit longer, and I should have also applied the butter midway through the baking (to give it that super buttery taste).  Instead, I was left with an average spud with above average toppings (a shit-ton of BBQ, butter, cilantro, cheese & butter).  Oh well... live and learn.
