Who would have known that chicken parmesan could be so easy?  Last week, I prepared some delicious chicken parm, shake and bake style by combining breadcrumbs and parmesan cheese in a bag, before "shaking" up some chicken breast which I dipped in eggs.  The result was a semi-healthy, protein rich dinner, which was incredibly quick and easy to make.  My biggest mistake was making WAY too many pieces of chicken, as well as way too much angel hair pasta to go with it...as we are still chowing down on the leftovers almost a week later.  Regardless, looks like this meal is probably making its way onto the GCMs permanent menu.  Yum Yum.
